Tuna tripe is one of our traditional dishes, particularly in the hillside village of Moglio. If you have never tried it for yourself, then in July and August you can visit the annual festival held in its honour.

At the event, local chefs serve up this ancient tuna fisherman’s meal which involves cooking the tripe in a sauce with potatoes, crushed tomatoes, parsley, pine nuts, laurel, walnuts, garlic, white wine and extra-virgin olive oil.
A truly unique meal which blends the flavour of the sea with the taste of the land!
